The ideal candidate has hands-on expertise in sushi rice, unparalleled seafood, nori, knife skills, handroll technique, and delivering consistency.

Head Chef Responsibilities:
- Develop and execute the restaurant’s menu and culinary voice alongside group leadership
- Hire, train, and mentor team with the goal of maintaining a positive and passionate work environment throughout opening process and beyond
- Ensure all food meets the highest standards of quality and consistency
- Administrative duties to include: scheduling, ordering, receiving, quality control, and inventory management
- Proactively manage costs and budgets
- Follow best practices for safety and sanitation in the kitchen
Head Chef Requirements:
- 3-4+ years as an Executive Sous Chef or Chef de Cuisine within modern Japanese concepts
- Experience in temaki / Japanese hand rolls required
- Ability to relocate internationally and commit to vis sponsorship (two-year visa)
- World’s 50 Best, Michelin, or James Beard experience in the past is a bonus!
- Proven leadership, team building, and mentorship skills
- Strong organizational and time management abilities
- Clear and effective communicator with high emotional intelligence
- Demonstrates financial acumen with experience managing P&Ls and labor budgets
- Exceptional standards for cleanliness, health, and safety
- Flexible schedule, including weekends, and on holidays
Compensation & Benefits
- Base salary in the range of approximately $92k-$115k USD annually (based on fluctuating currency rates and paid in HKD)
