Multiunit Executive Chef – Michelin-Aspiring Concepts Los Angeles & Central Coast CA

Unique multi-unit role with a growing luxury group! Seeking an Executive Chef to oversee and provide guidance to the team at their existing CA Central Coast-based concept, and also support with opening their new Los Angeles County concept slated to debut in the fall of 2022. This role will focus initially on providing leadership and direction to the chef and team at the existing Central Coast restaurant, ideally guiding them to their goal of attaining a coveted Michelin-star. Ultimately this person would transition to spearheading the new L.A. opening, and from there would be responsible for running day to day operations of the restaurant with some continued oversight in the Central Coast. The new concept will feature an elevated and accessible menu with a focus on ingredients – dinner service only to start. Pedigree is important for this role, but the team isn’t looking for anything overly formal or composed.

Multiunit Executive Chef Responsibilities:

  • Oversee and provide hands-on mentorship to the team at existing restaurant
  • Provide guidance with seasonal menu development, organizing prep, food cost, and execution of service
  • Training and coaching of employees in methods of cooking, preparation, plating, portion and cost control, and sanitation/cleanliness
  • Responsible for achieving the highest level of guest and employee satisfaction while creating a fun, professional, and productive working environment
  • Operates with a guest first mindset and strives to accommodate any and all needs/requests
  • Analyze existing pricing and operational systems and suggest new approaches to increase profitability/efficiency
  • Support opening process for new restaurant concept
  • Hiring and proper staffing
  • Oversee all day to day operations for new concept upon opening
  • Work with local farmers markets and vendors to source the freshest ingredients
  • Ensure that all food and products are consistently prepared and served according to the restaurant’s recipes, portioning, cooking and serving standards
  • Effectively manage kitchen labor and food cost to achieve or exceed ideal labor cost standards

Multiunit Executive Chef Preferred Requirements:

  • 3-4 years’ experience as an Executive Chef, Multiunit Chef, or Regional chef working in upscale, accessible fine-dining concepts
  • Recent background in Michelin and James Beard restaurants highly preferred
  • MUST have a desire to be hands-on both in training/development and in the kitchen
  • Wood-fired experience a plus
  • Strong business acumen and able to maintain food and labor costs in a seasonal environment¬†
  • Passionate and operations oriented
  • Love for quality, seasonal ingredients and simple, memorable dishes
  • Exceptional standards for cleanliness, health, and safety
  • Passionate about growing individual employees and providing a positive work environment
  • Excellent communication skills and leadership qualities
  • Flexible schedule, including weekends, and on holidays
  • Ability to travel between both concepts – employer will provide lodging assistance
