Newly opened, cutting-edge Hollywood Restaurant is looking for an Executive Sous Chef to assist the culinary team. The restaurant will focus on contemporary Italian cuisine through a distinct lens. Looking for an individual that is passionate about daily pasta program and open-fire cooking.

Executive Sous Chef Responsibilities:

  • Assist the Executive Chef in menu development and recipe costing¬†
  • Ensuring that all food meets the highest standards of quality and consistency
  • Maintaining proper ordering and inventory
  • Ensuring best practices for safety and sanitation in the kitchen
  • Keeping track of new trends in the industry
  • Participate in weekly manager meeting and follow-up on assigned ideas and/or tasks
  • Communicate with vendors regarding ordering, new product offerings, pricing, and all other product-related issues

Executive Sous Chef Preferred Requirements:

  • 3+ years of experience in a similar position (Sous Chef, CDC / Chef de Cuisine or Executive Sous Chef) – ideally in a progressive Italian kitchen with emphasis on authentic techniques
  • Passionate about progressive Italian cuisine and open to new innovative ideas
  • Experience with Italian required
  • Open-fire and wood-fired experience a major plus!
  • Passionate and operations oriented
  • Love for quality ingredients
  • Exceptional standards for cleanliness, health, and safety – this is hugely important
  • Proficiency in Microsoft Office
  • Flexible schedule, including weekends, and on holidays
  • California Food Handlers Manager Certification
