Hollywood French brasserie is looking for a talented Chef de Cuisine to run the day to day operation! Looking for an individual that is passionate about ingredients, scratch cooking, and working with a wood-fired grill. The team is looking for a hands-on leader who is still passionate about actively cooking every night. Background in French technique, Western Mediterranean cuisine and respected restaurants required; specific French cuisine restaurants a plus!

Chef de Cuisine Responsibilities:

  • Menu development and recipe costing, keeping track of new trends in the industry
  • Ensuring that all food meets the highest standards of quality and consistency by actively working stations during dinner service
  • Recruiting, hiring, training and development of culinary team members
  • Communicate with vendors regarding ordering, new product offerings, pricing, and all other product-related issues
  • Proactively managing costs and budgets, maintaining proper ordering and inventory
  • Ensuring best practices for safety and sanitation in the kitchen

Chef de Cuisine Preferred Requirements:

  • 3+ years of senior culinary leadership experience as an Executive Chef, Chef de Cuisine, or Senior Sous Chef
  • Proven experience in French and/or Mediterranean cuisine executed at a high level in respected restaurants
  • Chef-driven restaurant experience required  
  • Any prior hotel experience a plus!
  • Excellent communication skills and leadership qualities
  • Creative, innovative thinking, collaborative and able to give and receive feedback
  • Exceptional standards for cleanliness, health, and safety
  • Experience in managing inventory and cost controls
  • Flexible schedule, including weekends, and on holidays
