Growing Mexican cuisine-rooted group is seeking a highly skilled Culinary Director to champion the founding chefs’ visions for their multiple concepts. This chef will ensure consistency throughout the company, upholding the top-quality inspired cuisines these brands are known for, with varied service and business models. As a knowledgeable ambassador of the group, the Culinary Director will be an active developmental resource for kitchen leadership throughout the organization and will be involved with menu development for the various concepts. Culinary Director Responsibilities:
- Maintain recipe standardization and drive consistent execution at all locations, ensuring clear communication between corporate leadership and kitchen teams to align objectives
- Develop and refine kitchen systems and strategies to improve efficiency and enhance profitability while maintaining high standards, product and quality
- Uphold the company’s commitment to sustainable practices, overseeing ingredient sourcing and vendor relationships to maintain product integrity
- Recruitment, hiring, training of key management level chefs
- Define, track, and enforce kitchen financial targets as well as train and support kitchen leadership in P&L analysis, costing, etc, guiding these chefs to achieve goals through strong mentorship
- Develop a structured training program and materials for culinary staff, fostering a strong culinary culture promoting accountability, collaboration and development
- Assist in any future concept development and openings
- Lead food safety & sanitation efforts, including HACCP, FDA, OSHA, and other governmental and federal regulation compliance
- Lead menu development across concepts in collaboration with restaurant teams, ensuring top-quality standards, seasonality, rotation and the high-level vision and flavor profile expectations of ownership
Culinary Director Preferred Requirements:
- 3+ years’ experience in a multi-concept or multi service format style Chef role such as a Culinary Director, Regional Chef, Multiunit Executive Chef, Area Chef, or Corporate Chef
- Extensive knowledge of multi-unit kitchen operations and independently owned restaurants
- Experience with a range of service models in ingredient driven, respected, chef-driven, scratch kitchens
- Ability to travel up to 50% within California, Nevada, Arizona, and potentially future Southwest operations
- Mexican cuisine exposure is required, a professional working knowledge is highly preferred
- Spanish language proficiency beyond kitchen Spanish is a big plus!
- Takes a hands-on approach, with the ability to balance creativity and efficiency.
- High level of analytical and written communications skills, organization, problem solving and presentation
- Expert in leading, mentoring and developing kitchen teams and future leaders
