Progressive, fine dining California steakhouse is looking for a talented CDC to support the Executive Chef in menu development. This is a creative role that also requires a truly passionate leader, who enjoys the mentorship and development part of being a chef. Routinely high-volume services call for a Chef de Cuisine with acute attention to detail and understanding that new menu items need to be executable on a busy Saturday night. There are strong systems in place and this role is coming in to compliment the well-oiled team.
Chef de Cuisine Responsibilities:
- Create memorable dishes using technique and scratch cooking
- Collaborate with and support Executive Chef
- Menu development and recipe costing
- Keep track of new trends in the industry
- Inspire, lead, mentor, and coach a strong culinary team
- Maintain proper ordering and inventory, scheduling, etc
- Ensuring best practices for safety and sanitation in the kitchen
Chef de Cuisine Preferred Requirements:
- 3+ years of experience in a similar position (Senior Sous Chef, Executive Sous Chef, CDC, Executive Chef)
- Passion for the culinary industry and love of scratch cooking and quality execution
- Track record in chef-driven restaurants
- Strong longevity in past roles
- Creative, innovative thinking and ability to introduce new ideas
- High level of organization and attention to detail
- Excellent communication skills and leadership qualities
- Ability to thrive and motivate the team in a high-volume environment
- Experience in managing inventory and cost controls
- Flexible schedule including nights, weekends, and holidays
