Progressive, fine dining California steakhouse is looking for a talented CDC to support the Executive Chef in menu development. This is a creative role that also requires a truly passionate leader, who enjoys the mentorship and development part of being a chef. Routinely high-volume services call for a Chef de Cuisine with acute attention to detail and understanding that new menu items need to be executable on a busy Saturday night. There are strong systems in place and this role is coming in to compliment the well-oiled team.

 

Chef de Cuisine Responsibilities:

  • Create memorable dishes using technique and scratch cooking
  • Collaborate with and support Executive Chef 
  • Menu development and recipe costing
  • Keep track of new trends in the industry
  • Inspire, lead, mentor, and coach a strong culinary team 
  • Maintain proper ordering and inventory, scheduling, etc
  • Ensuring best practices for safety and sanitation in the kitchen

 

Chef de Cuisine Preferred Requirements:

  • 3+ years of experience in a similar position (Senior Sous Chef, Executive Sous Chef, CDC, Executive Chef)
  • Passion for the culinary industry and love of scratch cooking and quality execution 
  • Track record in chef-driven restaurants
  • Strong longevity in past roles 
  • Creative, innovative thinking and ability to introduce new ideas
  • High level of organization and attention to detail
  • Excellent communication skills and leadership qualities
  • Ability to thrive and motivate the team in a high-volume environment
  • Experience in managing inventory and cost controls
  • Flexible schedule including nights, weekends, and holidays
