Salary: $80000 – $95000
Acclaimed Italian restaurant with a loyal following is seeking a Head Baker to join their team for an exciting opening! The Head Baker is responsible for overseeing the day-to-day operations of the bakery side – including focaccia, bread, and pizza dough production. This is a great opportunity to join an established group in Los Angeles with very low turnover!
Head Baker Responsibilities:
- Plan, direct and supervise the preparation and production activities of the bakery department in accordance with the company’s standardized recipes.
- Maintain proper food holding and refrigeration temperature control points.
- Monitor costs on a regular basis in order to maintain targets based on food, labor and overhead costs.
- Review price lists from suppliers on a weekly basis and plan purchasing accordingly.
- Prepare Purchase Orders (POs) for all food orders placed.
- Control food cost by ensuring consistency with recipe standards.
- Manage the counting of inventory on a monthly basis and submitting month end reports to the Head Oce.
Head Baker Preferred Requirements:
- 3 years of experience as a Head Baker, Baker Manager, or Lead Baker
- Well versed in breads, pizza dough production, Italian pastries, and laminated doughs
- Strives for perfection and has genuine passion for high-quality ingredients Excellent communication skills and leadership qualities
- Exceptional standards for cleanliness, health, and safety
- Flexible schedule including early mornings, weekends, nights and holidays
Compensation includes:
- Base salary range: $80-95k range
