Respected and modern Michelin starred group is looking for a Head Butcher! This role would be involved with spearheading the butchery team for restaurant usage as well as retail sales. Extensive knowledge of meat and poultry fabrication required and charcuterie experience a plus! Perfect opportunity for a Sous Chef passionate about butchery and looking to step off the line.


  • Managing a small tight knit team
  • Attention to food and labor with a focus on wastage
  • Oversee vendor communication and sourcing, inventory, and ordering
  • Performing quality inspections on meats and other products in conjunction with food safety and sanitation
  • Cutting and preparing meats for service
  • Cleaning and maintaining tools and equipment and ensuring labeling and stock making procedures

Candidate Requirements:

  • Minimum 2 years butcher experience and 1 year in a leadership role as a Sous Chef or Chef de Cuisine (CDC)
  • Knowledge of a variety of whole animal fabrication and primal cuts
  • Charcuterie and curing experience preferred
  • Strong communication and management skills
  • Food Handlers/Safety Certification
