Acclaimed Los Angeles bistro known for its elevated dishes and dazzling atmosphere is seeking an Executive Sous Chef to join their team. This stunning restaurant features a beautifully designed outdoor bar and dining space, and a renowned chef-driven menu utilizing only the best and freshest ingredients. The ideal candidate is highly organized and has experience running a clean, seamless kitchen operation. Spanish proficiency is highly preferred. This person will need to be hard-working, humble, and capable of executing the existing, high-caliber recipes already in place. There will also be some flexibility over time for the Chef to add additional items and possible menu specials. Executive Sous Chef Responsibilities:

  • Work alongside the Executive Chef 
  • Ensure that all food and products are consistently prepared and served according to the recipes, portioning, cooking and serving standards of the restaurant
  • Assist in implementing the menus including daily and seasonal specials
  • High-level execution is required
  • Overseeing the kitchen team of 15 employees
  • Supervise and train the staff on recipes and methods of cooking
  • Expedite service efficiently and effectively, maintaining the proper pace and food quality
  • Understand and maintain all policies, procedures, standards, specifications, guidelines and training programs. Follow through with training and coaching to ensure that all policies and laws are followed
  • Maintain company expectations of food and service through the supervision of the entire kitchen team
  • Achieve company budget objectives in sales, costs and profit
  • Achieve company goals in service, food quality, facility maintenance, sanitation and cleanliness through coaching of employees
  • Fill in where needed to ensure that the guest experience is never compromised, and their expectation of food and service are met and/or exceeded
  • Upkeep of all kitchen equipment and facilities so that health and safety standards are met. Achieve this through maintenance programs and inspections
  • Follow scheduling and adjust as necessary to achieve Labor Cost goals
  • Fully understand and comply with all federal, state, county and municipal regulations that pertain to health, safety and labor requirements of the restaurant, employees and guests

Executive Sous Chef Preferred Requirements:

  • Experience working in a professional kitchen as an Executive Sous Chef, Kitchen Manager or CDC for a minimum of 2 years
  • Spanish fluency highly preferred, some level of Spanish proficiency is required
  • Vast knowledge of culinary techniques, procedures and equipment 
  • A love for high-caliber food and hospitality
  • Friendly, outgoing, energetic team player with a positive attitude 
  • Ability to think quickly and multi-task in a fast-paced environment 
  • Ability to communicate effectively, both verbal and written 
  • Flexible schedule including weekends and holidays
  • Experience with, expediting, ordering, inventory management, recipe costing, corrective action and staff training
  • Enforcement of safety/sanitation standards and procedures
  • Food handlers license 
  • Ability to take and give direction
