Highly acclaimed, Michelin-starred restaurant group is seeking a Director of Bakery Operations to join the team! This is a new support position for the team. This role is responsible for managing the daily operations of the bakeries, including the selection, development and performance management of employees. In addition, you will optimize profits, productivity and future growth opportunities. 

The Director of Bakery Operations Responsibilities include but are not limited to:

  • Consistently provides a quality product and contributes to the customer service experience that delivers total customer satisfaction.
  • Responds positively and quickly to customer or potential customer concerns. Correct potential problems before they affect customers.
  • Maintains restaurant at the level necessary to meet or exceed the company standards for Quality, Service and Cleanliness (QSC). Maintains the highest of food safety standards and an “A” grade from the Health Dept at all times.
  • Utilizes labor effectively to meet budgets while ensuring high quality of QSC.
  • Collaborates creatively with the Pastry Chefs on specials and holiday menus. Communicate holiday special information, pricing and availability to the FOH in advance.
  • Complete all recipe testing, costing, pricing, menu keys, and scheduling of photoshoots in advance, in addition to facilitating employee training on new items.
  • Attend weekly manager meetings and monthly P&L meetings. Be responsible for all Bakery labor and COGS numbers, inventory, budget tracker, etc. and be adequately informed in order to speak to all bakery-related P&L categories.
  • Conducting 90-day and annual reviews as a benchmark to evaluate all employees’ performance and address positive behaviors and/or areas for improvement and encourage open lines of communication amongst their team.

Director of Bakery Operations Qualifications:

  • 5 years in similar management positions such as Commissary Manager, Head of Production, or Head Baker over a large bakery
  • Passionate, creative and talented with a love for quality ingredients
  • A positive leader who is organized and tech savvy with great communication skills
  • Excellent communication skills and leadership qualities
  • Exceptional standards for cleanliness, health, and safety
  • Creativity to design new and unique menu items
  • Flexible schedule including early mornings, weekends, nights and holidays
