New high volume steakhouse is looking for two Chef de Cuisines to help lead the opening process alongside the Executive Chef. The restaurant is a part of larger, popular New York based hospitality group that specializes in restaurants and nightlife operations. The ideal candidate will have leadership experience in 10 MIL + operations and a firm grasp of managing costs. The restaurant is slated to open in Q4 of 2021 but looking to bring on the Chef de Cuisine now! This role will require travel to New York to train for a couple months.

Chef de Cuisine Responsibilities:

  • Assist Executive Chef with pre-opening and post-opening projects
  • Participate in hiring and training of culinary team members for opening
  • Maintaining proper ordering, scheduling and inventory
  • Executing existing core menu items with tweaks for Los Angeles market
  • Day to day management of kitchen and team
  • Ensuring that all food meets the highest standards of quality and consistency
  • Ensuring best practices for safety and sanitation in the kitchen

Chef de Cuisine Requirements & Preferences:

  • Past experience as a Chef de Cuisine leading a high volume operation of 12 MIL volume OR Executive Chef of a 10 MIL+ operation
  • Train and learn systems in New York for a couple months
  • Excellent communication skills and leadership qualities
  • Ability to thrive in a high-pressure environment
  • Previous experience in an all scratch kitchen
  • New restaurant opening experience is a plus
  • Exceptional standards for cleanliness, health, and safety
  • Knowledge of P&L, managing inventory, and cost controls
  • Flexible schedule, including weekends, and on holidays
